Oven-roasted Carrots With Caramelized Apricots

Nutritional Facts

* Carrots are full of many health benefits including healthy vision, weight, and balanced blood sugar

- 1 lbs Baby Carrots
- 1 Apricot
- 1 Orange
- Olive Oil
- Salt and Pepper

- Preheat oven to 400˚F
- In oven safe pan heat up enough olive oil to lightly cover surface of pan
- Sautè carrots on medium-low for several minutes until they develop some color
- Squeeze quarter orange into pan
- Add diced apricot to pan and another whole quarter orange to pan
- Lightly salt and pepper carrots and place the pan in the oven. Roast for 20m or until carrots are cooked through (a fork should easily pass through carrots when finished)
