Ratatouille

Ingredients:
- 2 eggplants
- 6 roma tomatoes
- 2 yellow squash
- 2 zucchini
- 1 diced medium white onion
- 2 tbsp olive oil
- 4 diced cloves garlic
- 28 oz crushed tomatoes
- 2 tbsp basil
- 1 diced red pepper
- Salt and pepper
Directions:
- Slice eggplants, tomatoes, yellow squash, and zucchini roughly 1/16 inch thick
- Mix onions, garlic, red peppers and olive oil in pan on medium high heat until soft
- Add crushed red tomatoes and season to taste with salt and pepper
- Remove from heat then add basil and stir
- Next add sauce to bottom of baking pan then place sliced vegetables in alternating slices and add salt, pepper and olive oil
- Place in oven preheated to 375 F for 40 mins with foil then bake for 20 mins uncovered
