Sweet Potato Mash
Nutritional Facts
*Sweet potatoes are rich in Vitamin A, Vitamin C, B-Carotene, fiber, and potassium
*Sweet potatoes made the "Clean 15" - your potential exposure to toxins is lower than conventionally grown produce
Ingredients:
- 2 large red sweet potatoes
- 2 to 4 oz butter
- 2 tbsp maple syrup
- 1 pinch salt
- ½ cup milk
Directions:
- Bake sweet potatoes for 1.5 hours at 325F (check if toothpick penetrates through skin without resistance)
- Melt butter in pan/pot until slightly brown.
- Deskin potatoes and mash potatoes in bowl and add to butter.
- Stir and mash and add maple syrup.
- Add a pinch of salt.
- Add milk until desired creaminess is achieved.
- Serve and enjoy!
